    Shigoku oysters are innovative Pacific oysters grown in float bags that rise and fall with the tides, gently tumbling the oysters. This process mimics a good workout for oysters, strengthening their adductor muscles and resulting in firm, plump meat and a deep, clean cup.

    Shigoku means "ultimate” in Japanese, and we think these unique oysters fit the bill.

    Shigoku Oysters

    Oysters were great. The only issue was two were open.

    Taste/Consistency

    I love the deep shell of these oysters. However they lack consistency. 7 shells out of 40 where open and dried out and some that were close had very little liquid in them. Some were very good however but probably won't buy this oyster again. The store itself does an excellent job packing and arrives FedEx NDA early morning delivery.

    Perfect

    These were perfect oysters with deep cups and a nice flat lid. Packaged extremely well. I preferred these to the Kumamoto because they weren't as intensely salty and were more sweet and melony. Some of them were unbelievably sweet! I would definitely get them again

    Shigoku oysters

    I love this oyster cultivar. The meat is the same size as the shell. The next size up Fat Bastards are the best. Wish that you offered them for online sale.

    Still the Best

    These oysters are by far the best in the West. Taylor Shellfish does a great job with packaging and shipping. Made for a special father's day eating oysters with my teenage sons (who now fight me for every one).

    2020 Father's Day Treat

    Took Father's Day preparations into my own hand (didn't quite trust the urchins) and ordered the Shigoku oysters. They arrived timely in really great packaging. Popped one delicious oyster straight out of the package and stored the rest overnight in the fridge with no deterioration of quality. Ate every last one of them on the half shell the next day with a choice shallot/tarragon mignonette, fresh horseradish cocktail sauce, lemon, and South Carolina style hot sauce. Washed them down with a crisp 2018 Zenith Vineyard Auxerrois from Ore Winery. Absolute heaven!!! Will definitely order again.
