Shigoku oysters are innovative Pacific oysters grown in float bags that rise and fall with the tides, gently tumbling the oysters. This process mimics a good workout for oysters, strengthening their adductor muscles and resulting in firm, plump meat and a deep, clean cup.
Shigoku means "ultimate” in Japanese, and we think these unique oysters fit the bill.

Meaty!
I used these oysters for an "East Meets West" oyster bar party. They have a deep cup, hold their liquor well and are mild but meaty. They are a nice pairing with Kumamoto oysters. Taylor's shipping packaging is the best I have ever seen. The oysters arrived fresh and cold. Thank you Taylor.
