    The only oyster truly native to the West coast, these little gems are small in stature but huge in flavor.

    Originally called the “Native Western” oyster, they were renamed in 1889 shortly after Washington received statehood. In a competition over the location of the state capital, those in favor of Olympia held a series of public meetings to persuade voters. At the culmination of these meetings, an oyster dinner was served. The oysters were so appealing that Olympia won the bid and from then on, they were known as Olympia oysters.

    The beginner half-shell eater might choose the little “Oly” as an introduction before progressing to larger varieties. But after developing a more sophisticated palate, they always humbly return to their beloved first slurp—the mighty Olympia oyster.

    Olympia Oysters!

    I wait all year for these beauties to come back in season! They are so unique and easy to slurp! I love that they are small but full of flavor. I don’t like big fat Atlantic oysters so these are perfect for me. ❤️

    Olympia Oysters

    These have always been my favorite. We get them at Thanksgiving for oyster stuffing and always get enough to do some slurping. I've always found them easy to shuck and the taste is always wonderful.

    Olympia Oysters

    Had them for Valentines dinner. A little hard to shuck. We like smaller oysters, so Olympia fit the bill. Arrived on time, well packaged, wish shipping was less expensive.

    Olympia Oyster

    I had to try these oysters as I am fro the East Coast and love the Atlantic oysters. I am not a fan of the Japanese Oysters (metallic taste to me) and was disappointed to find that they had made their way to Scotland and other northern Atlantic waters. These Oysters didn't appeal to me in flavor or brine. They were tiny 3 year olds and only a few had begun to develop a cup. Perhaps, with a few more years growth, they might appeal more. Still - I am very happy to have found these examples of what was (and, happily still are) the oyster of these waters.

    Olympia Oysters - Local Bliss

    I don't recommend Olympia oysters to just anyone. There are many varieties that are larger with a cleaner flavor profile. The Olympia, however, is the last remaining variety native to the Puget Sound. We almost harvested them into extinction a century ago. I use my imagination and appeal to local nostalgia when I order Olympias in the Fall. It is a wonderful, complex, and unique little oyster. More difficult to shuck due to their small size, they have an odd, copper green color on the inside of their shell. The flavor and defining metallic finish are completely addictive. They take me back to the early days of the Pacific Northwest, when loggers and other pioneers shaped the region we call home today. Try them at least once. I pair them with a Hazy IPA, not wine.

    Olympia Oysters

    The Olympia Oysters are such an indigenous treasure! firm body, with such depth of flavor and a sweet finish. The shell, itself, is gorgeous. Was interested in the difficulty people were reporting opening them. It is important to get the tip of the shucking knife down deep enough that one does not split the mother-of-pearl shell. Then a twist will pop the shell, and the rest is simple. Opening ours was far from difficult. But the oyster is do sublime that I often feel one should eat it on bended knee. Thank you!

    Oly Oysters

    I would not order these again! Much harder to open and very small. Not much "meat" and almost no brine. Very dry and not worth the effort nor the money.

    Olympia oysters

    I haven’t had Olympias in several years. The first Surprise was that they seemed much larger than I remembered. Still small. The second surprise was how hard they are to open. My friend had brought a dozen Shigu (Sp?) & a dozen Kiyamoto from your farm on Chuckanut drive. Compared to the Olympia they were a piece of cake. The third surprise was how wonderful they tasted. Much more flavorful than any other oysters I have ever had. A treat, but a hard won one. I recommend only shucking half and then relaxing & eating them before you tackle the rest. We had a Grochau Melon de Bourgogne ( the grape of Muscadet) from Oregon with them which complemented them very well.

    olympia oysters

    Don't bother.Way too small, flat no body.Hard to open, knife thru shell shreds whats there.Feel like I didn't even eat 1 oyster
