Known for their firm, full meats and unique synthesis of brine and sweetness, our Totten Inlet Virginicas are regarded as some of the finest oysters around. Virginicas were originally found only on the reefs of the Atlantic Coast, at depths of 8-25 feet, before being introduced to the Pacific Coast in the 1890s. Notoriously finicky in our waters, they only thrive on the beaches of Totten Inlet where the algae-rich waters from neighboring Little Skookum inlet mix with the deeper waters of Puget Sound allowing these oysters to develop their distinct and sought-after flavor profile.

This was the second time I ordered these and they did not disappoint. We usually prefer the brininess of east coast oysters and these are absolutely amazing. I love that they are more local (I'm in Los Angeles) and Taylor always does an amazing job of shipping them. Already looking forward to my next order!
Wow! I enjoy west coast oysters and east coast oysters, for different reason. I enjoy the salinity and crispness of east coast oysters (espically Glidden Points), yet I love the slightly sweet cucumber/melon flavor of west coast oysters (especially Shigokus). Somehow, the TIV's I recently received from Taylor blended what I enjoy about east coast oysters with what I enjoy about west coast oysters, in one shell. Brine up front, followed by the slightly sweet cucumber/melon flavor. Simply amazing. TIV's are likely at the top of my list of oysters now. The TIV's arrived fresh and cold, with plenty of liquor inside the shells when shucked.
