Virginica oysters
Growing up on the Gulf of Mexico coast I've been eating Atlantic oysters (Crassostrea virginica) all my life. I've enjoyed Pacific oyster species too, just not quite as much. I received a Taylor gift certificate and when I saw that they were farming Virginicas in Pacific water I was very intrigued. They are very impressive! The flavor of the oyster is still very much Atlantic, genetics I assume, and the liquor is very much Pacific. They are salty, which I like since most of my DIY oystering was from a hypersaline bay in Texas. Because these are farmed they have a very uniform size and shape with strong healthy shells. These are definitely my favorite West Coast oyster by a wide margin!
