Original Ekone Smoked Oysters and Habanero
Taylor Shellfish farms has an excellent product line. The original smoked oysters are my favorite of the various seasonings. Upon opening the can, they are delightfully presented, with only about a teaspoon of oil to keep them as they are. I think somebody must place one oyster directly in the center of the can since most cans we open have that one just so. Some oysters have more muscle texture than others, and I find that quite appealing as each oyster may be different from another. So you have some textural variety in a serving. You did a great job on the video to show a small glimpse of the processes involved, like having an open kitchen at a restaurant. Some people love spicy and rave about the Habanero oysters. For me, the hanero is not appealing as it packs a little bit of heat, "picante" and this distracts from the delicate flavor of the oyster. For a premium oyster, you want to emphasize the delight of the oyster, but there is spicy if you prefer that. If I could purchase 2 cases at $8 per can, that would be my preference to improve the value of some very fine oysters in the metal can.
