Tomato and Nectarine Salad with Smoked Mussels

This salad is a celebration of summer produce in its prime. The marriage of juicy nectarines and golden yellow tomatoes is a seasonal classic. We’ve taken our rendition for a smokier spin by adding a tin of our meaty smoked mussels and dressing the lot in a bright, smoked paprika spiced vinaigrette.

Ingredients:

  • 1 teaspoon sherry vinegar
  • 2 teaspoons olive oil
  • ½ teaspoon maple syrup
  • ¼ teaspoon smoked paprika
  • ½ teaspoon red pepper flakes
  • Pinch of fine sea salt
  • 1 medium yellow heirloom tomato, cut into bite size pieces
  • 1 ripe nectarine, pitted and cut into bite size pieces
  • 1 can Ekone Smoked Mussels
  • Flaky salt to season
  • Torn basil to garnish

Instructions:

  1. To make the dressing, combine the sherry vinegar, olive oil, maple syrup, smoked paprika, red pepper flakes and a pinch of salt in a small bowl. Whisk to emulsify.
  2. Add the tomato, nectarine, and mussels to a medium mixing bowl and pour over the vinaigrette. Gently toss to dress all of the nooks and crannies.
  3. Spoon the salad onto a serving plate. Season with a pinch of flaky salt and garnish with torn basil.
