Ready to start you mornings with a little Southern European flare? With our Ekone Mussels in Marinara you can easily whip up a companion for your morning coffee fit for a minor celebrity. Of course, you can serve miniature versions of our bivalve toast as a bruschetta-like appetizer if you’re wanting to share the marinara magic with your dinnermates.
Ingredients:
- 1 slice sourdough toast, toasted
- ¼ cup ricotta, drained of liquid
- 2 tablespoons marinara sauce
- 1 tablespoons olives, black preferred
- 3 sundried tomatoes, roughly chopped
- 1 can Ekone Mussels in Marinara
- Handful of fresh dill and torn basil
Instructions:
- On the surface of your toasted bread, spread a thick layer of ricotta cheese over the entire face of the toast.
- In the center of the toast working outward, dollop the marinara in the toast’s center and spread over the ricotta, leaving ¼ inch of the ricotta uncovered around the toast’s crust.
- Over the marinara, arrange the olives, tomatoes, and Ekone Mussels in Marinara over the bullseye of the toast. Garnish with fresh dill, and basil and serve.
