In winter 2023, we transplanted beach grown Hood Canal seed into our generation 2 float bags at the mouth of the Willapa River. Our hope was that the rough winter at the river’s edge would polish, tumble and fatten the oysters into something unique. The outcome? Exactly that.
These oysters are clean, crisp bodied oysters with fresh flavors mirroring their micro algae diet. Just like the sharp, weathered fragments of glass carried by the tide, these oysters journeyed along the sound and transformed into beautifully smoothed ‘Beach Glass’ Oysters. These oysters thrive in our tumbling bags, where their shells are gently rubbed against each other, sculpting deep, smooth cups similar to the feel of tumbled beach glass and yields beautiful dense meat.

The oysters are grown to perfection. Smooth shells. Flavor of clean sea water unobstructed by sand and other things they pick up when raised on the beach. A fantastic experience you should try. You will be grateful you did if you eat oysters raw!
Received them yesterday and the shells are beautiful, the meat is just the right size, the shucking is one of the best I have experienced, and most of all the taste is FANTASTIC. I love raw oysters but for those who may not like them raw these will definitely change your mind. An all around well cultured oyster. Its style stand out positively from the rest!
