These Pacific Oysters are grown in beautiful British Columbia by the Canadian branch of Taylor Shellfish Farms: Fanny Bay Oysters. These cousins to our Washington-grown Pacific Oysters are raised in trays or bags in the rich, cold waters of Fanny Bay and placed on the rocky bottom to fatten and harden before harvest. They are similar to the Extra Small Pacifics from Totten Inlet, WA, but with a whiter shell and more brine. Known for their "full-slurp" effect, this oyster has a full body and showcases the mineral flavors of Baynes Sound.
Flavor Profile: Briny with a pleasant vegetal flavors imparted by algae and a sweet finish.
